To add British English to your list of preferred languages for succeedingly launched apps to choose from, launch System Preferences, go to the Language & Text panel, choose the Language tab, and drag British English to the top of the list. If British English is not in the list, click the Edit List button and add it. Depending on which OS you're on, some of the UI elements might be slightly different but are generally the same.
