Dropbox is what a lot of iOS developers are using for file-based sync.

If you want a more configurable sync protocol for arbitrary data, not just files, there’s Couchbase's TouchDB <http://touchdb.org> which I happen to be the main developer of. It syncs to CouchDB servers (or p2p.)
