At your first question or two, I was inclined to answer, but your questions reflect complete ignorance of Objective-C and the Cocoa frameworks. Apple's documentation offers excellent introductions to these concepts, and there are many good books.

The busy people who participate in this list do not have time to read them to you. Read them yourself.
