I have to add a +1 here. Bonjour has been incredibly robust for me both at the NSNetService level and at the DNS-SD level, you turn off and on networks, apps background, you add interfaces and it just works. I've never seen 'stop' not work, releasing the service not work nor quitting the app not work.

Have a hunt back through both your publish and subscribe code, this really does normally just work.
