You're sure you have an NSTableColumn selected, not Table View Cell that's in the column? Both have a Title field in the inspector.

No. The table header will do exactly that. The column headers can also be clicked to change the sort column and sort order. And they can be dragged to rearrange the columns if you choose to allow that. And that's where the user can resize columns.
