Then your claim that "there is no way to undo this damage" is incorrect. Open an image in Preview, crop it, and quit. Open it again and you'll see the document is marked dirty/Edited, and you can get back to the original either by clicking the close button and Revert Changes, or choosing File -> Revert Changes...
