So how do you export Acrobat files from InDesign with simple
"document-default" tags rather than the whole full-blown ICC profile?

I wasn't clear, sorry.

a. for the ICCBased color space specification the PDF 1.3 format supports document default and object specific ICC profiles, the whole profile being embedded (a very good thing), but

b. 'simple document-default tags' are the whole profile and not a reference to a non-embedded profile (a distinctly unsafe mode of embedding -:)), so your file will in any case grow by the size of the CMYK destination profile used as default for all CMYK objects without an object specific reference of their own.

On the whole object specific is what you want for unambiguous workflows.
