Your best bet is to use the "Remove Profile" AppleScript on the files
after saving. You can make it an automatic process fairly easily.
If you don't want to color manage CMYK files at all (i.e., all your
CMYK comes from the same source and is headed for the same
destination), you can set the policy for CMYK to Off, but that means
that Photoshop will ignore and discard any embedded profiles in CMYK
files, and interpret them according to your current CMYK working
space. If that will work for you, it's the easiest way. But if you
need Photoshop to correctly interpret incoming CMYK, the AppleScript
is really your best bet.
