I never had any problems running Photoshop 6 in Classic and working for
prolonged periods of time in it without a crash. On OS X 10.1, of course.

Prove It! maybe among the first apps to come out for OS X but ProfileMaker 4
is also rumored to be not too far from shipping with a carbonized version. I
am sur many people on this list have long gotten the beta. I think the big
thrill, for those who ca afford it, will be Heidelberg NewColor 7000 which
is being ported right now to Mac OS X. Used to run only under Win2k.
