The Default Input profiles are for use with untagged items.

the proofer is hardwired in, you get it automatically, unless you set CMYK to
unspecified, in which case the proofing emulation, and the inkjet profile as
well, are turned off.

That would be incorrect, and you don't get absolute (tint the proofer paper
to match the press paper) proofing from PressReady.

Well, there is a bit more flexibility, but its under the hood... from a
general user standpoint you found it all, as long as you selected a media
type, which sets the canned inkjet profile for that media as well. The only
thing you appear to have missed was the manual. <G>
