Only if it's a TIFF. If it's an EPS file it will not be converted.

It's been a while, but I have done this in QuarkXPress. If a CMYK image
has profile A embedded, and in Color Management you have the Separations
printer set to some other profile - profile B, then yes QuarkXPress will
do a CMYK to CMYK conversion.
But again, only with TIFF files.

It uses the default CMM specified in the (I think) destination ICC
profile.
