What is the best RIP to use on with an Epson 10000 with a Macintosh?

The main reason we would want it is to slow the printer down enough to
be able to print on canvas without smearing the ink. I am told the
Fiery RIP allows you to pause between each print pass function for 1 to
5 seconds. What would be the best RIP for a Macintosh?

Is Best about to come out with one? Or is there a better alternative?

Is is there another way to slow the printer?
