If you're printing Composite, your Pantone colors are being converted into
CMYK based on your profile selection. The sad truth is that you're not going
to find a profile that makes them look like they do out of the solid guide
(you'd end up having to make one).
Your best bet is to pick up the Solid to Process guide for Pantone
Coated/Uncoated. This way, you'll see how the Pantone library gets mangled
by converting to CMYK on a printing press. The profile that would work the
best is SWOP Coated (or uncoated, depending on your Pantone selection), but
it will still be somewhat off.
C. David Tobie has done some profiled Pantone work, but I don't know if it
happened in Quark XPress. He may be able to provide more insight.
