The RGB values in an Illustrator EPS document will be retained when
rasterized in Photoshop 6 as well - at least with Illustrator 10's
Illustrator 8 EPS files.

Probably because the other profile you replaced it with is calling for
black ink being a black hole. It probably doesn't differentiate between
100%K and 100C,100M,100Y,100K in terms of luminoscity.

Actually, if you go into Color Settings, click on Advanced Mode, go into
the Gray working space pop-up menu, there is a Load Gray option. You can
select the exact same CMYK profile you are currently using and Photoshop
will load the black ink behavior from that profile and use it for gray
behavior. If your CMYK image contains any information in the C, M, or Y
channels, it will of course get merged into the resulting K channel when
you convert to grayscale. Otherwise you should end up with essentially
the same values, +- 1%.
