I suppose you could:
- Know what your uncalibrated monitor profile is called
- Have your "profiled monitor" profile activated
- go into -- View > Proof Setup > Custom
- select the original "unprofiled" monitor profile
- use the "preview" checkbox to toggle back and forth.
If you want to see what would happen if Photoshop simply sent the
numbers in the file to the screen (which is what you get in 5 with
DUMC turned off), the procedure is to go to View > Proof Setup >
Custom, load your calibrated monitor profile, and select Preserve
Color Numbers.
Turning off DUMC in 5 doesn't decalibrate the monitor, it simply
disables the on-the-fly conversion from document space to monitor
space...
