Faro, in the colour settings of Photoshop 6 or higher you can mouse over the
loaded profile in the CMYK work space section for some info about the
profile in use (see the paragraph of text at the foot of the colour settings
box).
You can also convert a 0RGB patch to CMYK and read the values for the TAC
and black point build and K limit. You can also make neutral black/white
linear gradations/steps in CMYK and measure the build and black start point
and limit and view each ink separation or progressive combos etc.
With the help of Bruce Lindblooms dot gain calculator you can measure the
approx. dot gain for any profile (ms excell reqd):

SWOP v2 (TR001) - 300% TAC, #133 lpi screen, I can't find the dot gain
measurements I made as I write this - but I think they are around 20 for CMY
and 25 for K (+/- a few points either way) .
US Sheetfed v2 - 23/24/24/27 dot gain (I did find these, they are not my
guess as above), 350% TAC, #175 lpi screen
Not sure on the GCR with these profiles, appears to be around 'medium' in
old Photoshop table speak, it sure is not a skeleton black.
Unlike some other profiles, these Adobe v2 profiles seem 'safe' with no
major luminosity differences between rendering intents or weird behaviour
with BPC on when using RelCol.
I agree - MUCH more needs to be known about the common profiles that many
people blindly use. Not all of us have access to profile editing/viewing
gear so it is great that Bruce Lindbloom has offered his help with the dot
gain calculator/s and other tools. Thanks Bruce.
