You convert the data and not the profile.
Convert your RGB data from its source RGB profile into your CMYK
working space profile which is the profile for your intended printing
condition.
If you hand the printing company a native QuarkXPress file which the
company prints as PostScript to its RIP, include only CMYK data.

Your CMYK working space is your profile for the intended printing
condition.
First convert from RGB document space to CMYK working space in
Photoshop, second place in your document design software, third set
BESTColor to use the CMYK working space profile as its Reference
profile, and finally print PostScript to BESTColor.
PostScript does not support the ICC color space specification format.
Therefore, you must manually set the same profile in the software that
does the printing as in the software that does the proofing.
