Are the cameras RGB values modeled on the sRGB color space
It varies from camera to camera. Just like other devices they don't all
behave the same way, though in general they seem to model a monitor-like
space.

For readers of this list, familiar with profiling and Photoshop, the
best thing is to create a profile of the camera, or get a profile
somewhere. Lacking that you could arrive at an equivalent profile
through trial and error in Photoshop, try assigning different profiles
to the image and see which looks most accurate, sort of a ballpark
estimate. Or just open it into your working space in Photoshop and
tweak it from there, Photoshop will then embed your working space.
For those who don't read this list, who aren't familiar with profiling
or Photoshop, embedding either sRGB or a monitor profile is probably
close enough.
It's a question of "what do I do with an unknown source image?" Well,
the answer is either determine the source or make a best guess.
If I should embed the profile, I cannot use iPhoto to import my
photos.....does anyone know if Apple are adding this functionality?
Let's hope so. In the meantime you can use Image Capture, or use iPhoto
then embed the profiles with one of the ColorSync applescripts in
/Library/ColorSync/Scripts:
Embed Display Profile - embeds your display's profile (!)
Embed Chosen Profile - brings up a dialog so you can choose a profile
Embed Specific Profile - open this in Script Editor and set which
profile you want to embed, then just drag and drop.
