Yes to the point you understand the limitation of a profile. A profile
simply records the behavior of a device. IF that device alters it's
behavior, the profile isn't going to work as well (or not at all). So
process control is key here. When you say "common CMYK" that sets off a few
alarms.

This allows you to see on a soft proof (in something like Photoshop 6) the
output. You might get great output from the profile but find the previews on
screen are off (and you know the display profile is good). That portion of
the profile can be "tuned" to better proof on screen without affecting the
output portion of the profile.

You need a profile for each device ideally. The likelihood of two devices
behaving themselves to the point you can use the same profile is slim.
