You are going to need two files in two different recipes of CMYK for each.
What usually happens is one will convert to the final CMYK condition. That
file will be used for the ultimate output. With a copy of this file, you
would do a CMYK to CMYK conversion where the 2nd profile is for the proofer.
That converted file would then go to the proofer and be tossed. There are
workflows where all this can be automated with a single file of course. But
behind the scenes, a "copy" of the original is being converted for the
proofer.
There is a LOT more going on here than just tagging! We are converting the
file, changing the numbers of each pixel. At the same time, we tag the file
to indicate what conversion was just conducted.
