Please excuse my ignorance but why would you care about or insist on 'gray

No questions are ignorant or stupid unless phrased that way. <g>
Gray balance is key to getting awesome press profiles. A 2% shift in gray
balance is perceptible. I spend much time working with press men/woman on
gray balance. Once they see how jobs "fall in-line" they never turn back.
Linearization (calibration) is great to achieve a linear tonal response
for each primary ink colorant. Once you have achieved your linearization/dot
gain curves for the press then you deviate from recommended ink densities
for that paper stock to get your press gray balance.
Maybe I am in the minority but gray balance is king in my world. If your
input, monitor, and output device don't have color casts across the tonal
scale there will be minimal if none color bias faithfully translated in
conversion. Most ICC users miss this important point and struggle at every
turn to *compensate* for the color casts introduced in the source and/or
destination ICC profiles. You nail gray balance and you'd be surprised how
accurate you can match an original in hue and saturation will little color
adjustment in Photoshop.
