CMMs are engines used for doing conversions. ColorSync is more than an
engine. Most of it is an API that programmers use to do various things,
including access CMMs that are compatible with ColorSync. So Photoshop
set to use Adobe (ACE) uses that just as is engine for conversions. It
still uses ColorSync or ICM to find out what profiles are available on
the system.

If you select Apple ColorSync, then you are deferring to ColorSync to
determine what CMM gets used. If ColorSync settings are set to Automatic
then it will use the CMM specified in (I think) the destination profile.
You could also have Colorsync set to use a specific CMM. Whereas it you
set it to Apple CMM, then it always uses the Apple CMM regardless of
whether ColorSync is set to use the Heidelberg CMM, for example.

No, ColorSync does a lot more than an engine/CMM, so it is still being
used by Photoshop. It's just that a ColorSync CMM isn't being used.
