You cannot avoid ColorSync when printing on OS X. The source document will
eventually be converted to an output space before being handed to the print
driver. Neither the print driver nor the application have a say in this. The
document is color managed all the way.
When a new print driver is installed, is has the opportunity to register a
set of factory profiles, which is what you see in the ColorSync device list.
If the driver does not register factory profiles, whatever is selected in
the ColorSync panel as the output default is used (I think).
However, keep in mind that most all desktop inkjet drivers only accept RGB
input data (not necessarily because of any OS limitations, just because
that's how the vendors are used to coding them). That means the conversion
to CMYK is still handled by the driver, and that conversion might have been
coded to always expect a certain RGB space to be used for the input data
(e.g. sRGB). That may or may not affect your ability to generate a good
profile for a given printer.
