In InDesign 2.0 when you click File > New and look in the Edit menu,
notice that only Color Settings is enabled in the group of ICC
filters at the bottom of the menu. This is where you set the document
wide defaults.
InDesign 2.0 lets you set a default RI just as Pshop and Illustrator
do. But while each color model has its own working space profile,
each color model does not have a separate default RI, of course.
Hence there is only one document RI which you set at the bottom of
the Color Settings window.
The color options in the Place dialog are the same as in the Object >
Image Color Settings dialog. You use the Place dialog option to
assign the default working space, or to change the default RI up
front, of course. But taking a decision on changing the default RI
for an object being imported isn't that easy because you haven't seen
it yet. So mostly you want to wait until the object is placed, and
then visit the Object > Image Color Settings window to change the RIP.
I've used the release for about three weeks, and am still discovering.
