Gary,
Illustrator doesn't care which preview mode you work in - RGB or CMYK. You
can set your workspaces as necessary and define your preview mode to see the
influence of your workspace profiles. The whole philosophy of how to set
your workspaces is a completely separate issue.
When you hit "print", that will call up the driver for your printer. Adobe
apps append the average print dialog with souce/destination profile options.
If your driver is written to work with RGB data, only RGB profiles will be
available to use as output profiles. Keep in mind that many consumer-level
drivers are constructed to expect RGB, even though the printers use CMYK or
CcMmYK ink configurations. To profile such a device, treat is as an RGB
printer. The profile you make should then be available for use.
