How do I now specify, or for that matter, know that these particular
device color profiles are being used when I scan, edit and print?
Hod do you know that they were being used when you scan, edit, and
print prior to OS X? These settings did absolutely nothing unless an
application was specifically written to use those settings, and I think
if we all worked really hard we'd be able to count them all on one
hand. There were a few applications that would use the "Default
Profiles for Documents" pop-ups (namely Adobe applications), but I
can't think of a single one, although I'm sure a couple must exist,
that used the "Profiles for Standard Devices" pop-ups.
Anyway, I think Apple was hard pressed into seeing the value of
continuing this UI. While a good idea in theory, few people (both
consumers and vendors) used it, so it's been deprecated. You need to
set the profiles in your applications directly.
Should I make any settings in the ColorSync System Preference?
At this point it doesn't really matter. At some point it's expected
that all windows that don't explicitly inform the OS of a profile will
have one assumed based on the Default settings in the ColorSync system
preferences. Right now, Generic RGB and Generic CMYK are assumed.
When I print from my page layout software, should I still select
ColorSync [Print>Color Options>Color Correction>ColorSync]?
Depends on the page layout application. If the application is built for
color management, then you should have the application do all of the
color management and turn off color management in the printer driver.
