I think your students would find it immensely educational to actually see a
3D graph (not the 2D slice we're used to seeing) of how the various color
spaces compare to one another and how different CMYK profiles (spaces, if
you will) fit within those. Many people comment that a light goes off when
they see things graphed in this manner. Gamut compression, rendering
intents, etc, all seem to suddenly make more sense.
Do yourself a favor and buy a copy of Steve Upton's ColorThink software.
There's also a lot of other good color goodies on his site and is worth
exploring.

It will cost you around $100 bucks but I think it will be really useful in
educating your students.
