You have no choice at the moment, with the proprietary ink cart chips... its
just a matter of chosing photo black for glossy and semigloss work, or matte
black for matte and art papers.

Start with the Epson papers that interest you, and the profiles provided for
them. This will either suit your needs indefinately, or provide the baseline
for experimenting with other media and custom profiles.
