Paul,
I run into many of the same things you do: printers and other "service"
shops that have no idea about color managed workflows *or* think it has
something to do with the 6th level of Hell.
So when I need to use a new print shop, I call and ask "Should my document
be color managed?" If they say "No" I give them a PDF file to play with that
contains the images separated against the output profile. They get CMYK,
which they're happy with...and I get good output, which my client is happy
with.
