Another easier and foolproof method, is a component
utility of the recently released iccToolBox Pro from
icctools.com, called RichGray. It will convert a
profile of any colourspace into a Gray profile that
allows printing of beautiful neutral grayscale prints
using a full colour gamut inkset. The only thing it
will not correct for, is metermerism. It is an absolute
winner.
