The newspaper group I work for recently proposed profiling all 11

profiling target?

The IT8.7/3 is neither great nor awful based on the limited testing I did for the Seybold color profiler shootout session. And by limited testing, I mean the only CMYK output "device" was a Creo Spectrum outputting a Matchprint. It does a good job overall, but my finding indicate it's possible for highlight detail to get lost in the form of blow out with the IT8.7/3 compared to either the ECI 2002 target, or proprietary targets. I got the IT8.7/4 late in the process so wasn't able to test it - yet. I'll get around to that eventually. But I would expect it to do a better job than the /3 target since it's designed for packaging, which typically has a more volatile highlight reproduction.

I really don't use the 7/3 target and I know it's fairly old -- that's why
I'm turning to the experts for advice.

It depends on what profiling package you have, as to whether it's easier and/or better to use something other than the IT8.7/3. Usually the proprietary targets do a better job if your packages doesn't yet support the ECI 2002 or IT8.7/4

Strongly recommend that you do the two-step process with
linearization, so that you can relinearize the profiles when you have
to (which I suspect might be quite often) rather than having to build
new ones from scratch....

Yeah, I agree, but what a drag. I'd like to see those vendors who support updating profiles with a minimal target designed for such a task, to eliminate the two-step process requirement. GretagMacbeth Profile Editor has a profile update feature that does not require the two-step process.
