"Does the apparent step-shift signify something besides drift in monitor
profile or is a step consistent with normal behavior?"
Your monitor and/or printer could be the culprit. Both devices can
drift from the 'mark', that is - from their relative accuracy to the
respective profile. Profiles do not drift, so it's safe to assume (as
long as your conversion routine is consistent) that the behavior of one
or more of your devices has changed.
A very basic question for you: have you re-calibrated your monitor and
printer recently? If not you can re-calibrate the monitor through the
Displays option in your System Preferences, and run a nozzle check
through the Epson print driver diagnostics option. That will bring each
device closer in line with the operating state defined by its profile,
although it will not correct for device drift due to monitor aging. If
re-calibration doesn't do the trick if might be time for a custom
monitor profile.
