Hi James,
I would recommend the following books:
1. For current information on ICC color management..."Real World Color
Management" by Fraser, Bunting, and Murphy.
This book is up to date and covers areas for beginners up to advanced users.
It is aimed at the day to day application of color management in the graphic
arts industry.

2. If you want to be a real color geek and understand the math and theory
behind color science then I recommend "Color Appearance Models" by
Fairchild. This comes at color science from a physics and math point of
view.
