InDesign and Binary

I am wondering if some of you on this list might be able to help me. I've searched many different places and Lists and can't seem to find the help I need.

I want to send proofs from InDesign 2.0.2 to my Epson 5000 and Fiery Rip v1.1 from OSX 10.3.1.

The problem I am having is that in the Print dialog under Graphics you can choose either Binary or Ascii, but Binary is grayed out. Illustrator 10 will let me output in Binary, as well as Photoshop, and the Default Printer Style in InDesign shows that it wants to be Binary, when looking at the Style Settings. When I have a document with linked Illustrator EPS files I get a warning about sending Binary data as Ascii, unpredictable results and or failure to print, something like that.

Anyone know what's going on and how to enable the Binary setting? If I print to a Postscript file it will let me choose the correct language, Binary, but not when I simply want to print a proof.
