A profile audit trail in metadata is a good idea, but there are
plenty of reasons for wanting to assign a profile other than the
embedded one besides the one you cite. One trivial example would be
to see how a single CMYK file would behave over a range of different
outputs, hardly an unusual scenario.
A less trivial example would be to apply a newer, more accurate
capture device profile to an image capture-that's certainly an
experience I've had multiple times.
I think it's probably a good idea to put profile assignment at a
less-obvious stage in the hierarchy than conversions, but I for one
wouldn't want to do away with it entirely.
And bear in mind that metadata would simply record the profiles-it
doesn't say anything about their accuracy...

data is accurate.
