workflow questions

I just bought Real World Color Management, as well as Mastering Digital Printing(both excellent books). When trying to determine the best workflow, I am not sure how to set it up. I print photographic files with an Epson 1160 and Generations inks. I have Jaguar and PS 7.
These are my settings:

Working Space
RGB: ColorSync Adobe1998
CMYK: ColorSync generic CMYK
Colorsync Gray
Dot Gain 20%

Policies:
Preserve embedded profiles

Conversion options:
Engine: Apple ColorSync
Intent: Perceptual
Use BP Comp Use Dither

Would any other settings give better results? I've tried other settings and have difficulty "seeing" major differences.
I don't know if there is an "answer" to this. Maybe it comes down to how it looks in print.
Also, I use a Minolta Dimage 7i and convert the files upon download from the camera to the Minolta 7i. icc, which I like. I keep this profile when I print the files. Should I convert to Adobe 1998 instead? Is this problematic or not?

Does it ever end?
