First, you'll need the "XL" version of ColorProof, not "Medium", to drive
the 7600. Medium is strictly for 2-page proofers like the Epson 5000/5500
and 2100/2200.
Second, I'm not sure where you got your info about the 7600 being "super
fast". It's not. For "contract proofing" (I love it when people use that
term for inkjet proofing!), you'll be running it at 720x720dpi IF you get a
good paper but you may end up using 1440x720dpi mode to get enough density
(I'm assuming we're talking the Ultrachrome ink version, not Photo Dye
inks). Running at 1440x720 it is VERY slow. Compared to, say, the Epson
10000 or 10600, the 7600/9600 are easily 3-4x slower when pushed to
1440x720. For a 4-up proof, you're looking at around a 20-30 min. print
time. A 10000 can do that size in 7-8 min.
