Sounds to me like Illustrator is not passing the spot color name onto
Postershop, or it's doing it in a way that Postershop doesn't
recognize. I'd save out ASCI PostScript and see if you can find
reference for your Pantone colors in the QuarkXPress version and
Illustrator version and see if there is a difference in how the apps
are calling them out. You might also try placing the Illustrator EPS
into QuarkXPress and then outputting it to see what happens.

I found the problem today.
The Illustrator EPS must be saved as CMYK Postscript for ONYX to hook
the spotcolor.

Just checked to help verify this.
Spot colors from version 8 Illustrator work correctly (when naming
matches of course)
Spot color from v9 doesn't work at all.
Spot color from v10 works when the file is a cmyk or if the file is RGB
but saved out with CMYK checked at the EPS Format options window.
Made an Ill page with spot color 485 red. V8 and V10CMYK had the same
CMYK numbers. V9 was close, only a couple percent off (v9 RGB and v9
CMYK varied from each other).
v10 RGB was way off with 12% more C than the others.
