Any of the CMYK targets should do. You tend to not need as many patches with linearly-behaving systems like the Approval.
The separations settings are irrelevant as they only change the contents of the "rendering" tables (Lan->CMYK). The "proofing" tables (CMYK->Lab) are the same regardless of the black gen, ink limit, etc settings you make.
The preset available for "Offset" should do well for you. I would not treat it as a dye-sub. Approvals tend to profile well for proofing purposes.
