InDesign does even better. You can open the EPS in its originating
application, copy and paste it into ID and manage the color there all
from one table.
Just realize that the source profile is not copied over, and Image
Color Settings in InDesign is grayed out so you can't manually assign a
source profile. In order to color manage the document, you'd need to do
it somewhat manually; probably depending on normalizing. Since there
isn't a Convert to Profile feature in Illustrator, repurposing CMYK to
CMYK directly isn't possible, and it seems like you'd need to: assign a
suitable source profile to the EPS (if one wasn't embedded), convert to
RGB, set the CMYK Working Space to the new destination (which coincides
with the Document CMYK profile in InDesign) and convert to CMYK, now
copy and paste from Illustrator into ID.
