Custom CMYK is only in there to provide legacy support for pre-ICC
workflows. The ink models in Custom CMYK aren't the same as the
primaries in the v2 CMYK profiles. (The v2 profiles are actually
built from SWOP and FOGRA data sets, though Adobe cleverly forgot to
document which ones.)
The "profiles" you get when you save a Custom CMYK are very
limited-they only support colorimetric renderings, and they don't
contain a whole lot of data.
The easiest way to determine the dot gains in the v2 profiles is, as
David said, to feed something in and see what comes out. If you have
a profile with known dot gains, you can use that as a point of
comparison.

I think they are showing you the attributes of the ink models (which are
profiles). If not, what is being updated as I go from SWOP V2 to Euro to any
of the other hard wired ink models? And why can I click "Save..." and save
out an ICC profile from that?
