"What we're experiencing is a shift in proof color after a period of
approximately 48 hours."
I think that this is a fairly common problem with inkjet proofs. Most
systems need about 24 hours to cure before they're stable. I don't know if
this helps you in your current configuration, but we're using Epson
UltraChrome inks in an Epson 10600 and the color is extremely stable - right
off of the proofer. You might check to see if the inks that you are using
are dye-based or pigment-based. If you're using dye-based inks, you might be
able to get more stable results using pigment-based inks. Of course, you'll
lose some of your color range by making that switch.
