Is there a document which has been compiled by users that can recommend the best colour workflow for the major software applications such as illustrator & Quark. This sort of document would be very useful for both printers and their customers, could someone please contact me with recommendations.

I always recommend Real World Color Management by Fraser, Murphy & Bunting for this.

They've done a ton of work trying different settings on the major publishing apps and they let you know what works and what doesn't. A real service to the industry.
