Making my default gray-scale

I don't want to automatically print color -- the color cartridges are too expensive. I figured out how to get to ColorSync when I print a page, and set the Quartz Filter to Gray Tone. But I'd like to make that the default, instead of "none". I've tried going into the System Preferences for print & fax, but haven't been able to make it default to gray scale. Can anybody help?

I have a G4 Mac, running OSX 10.3, and an HPdeskjet 5550 printer.
