One of the most incredible tools out of new 'raw' window is without contest
the 'gray balancer' tool or, simply, the color picker tool. I recently took
some shots under a quite heavy bluish lighting. As you can imagine, the
shots came in with a heavy overall blue cast. Well, none of the traditional
Levels or Selective color correction tools I could throw at this problem
could do as good of a job as a simple touch of the 'raw' color picker.
Nothing. While it was a cinch to click in on an area of the image that was
supposed to be neutral and watch, with amazement and awe, how the whole cast
instantly disappeared. In my opinion, the tools tucked under CameraRAW are
little gems on their own and worth every sip of coffee investigating and
learning about.

Yes. Adobe has locked the Destination profile to only those that appear on
the Destination popup. Their call.

You do another 'bump' of conversion! Once opened out of raw in sRGB or
AdobeRGB or ProPhotoRGB, there is nothing that keeps you from converting to
your favorite working space.
