AHA! See, I knew it had to be a simple solution! :-P The previous
scanner profiles I've made could be accessed by the scanning software
directly. Until now I've never had to access a scanner profile from
Photoshop. Now that I think about it some more, it makes perfect sense
that a scanner profile would not be a space to convert "to". As a
device for capturing raw image data, it is logically the place that you
start "from."

between then and now is upgrade to OS 10.3.3. Aaarrgh!
scanner profiles cannot be set as working spaces or converted "to". So
Photoshop will probably only show them to you when you go to "Assign"
a profile. Can you see them in the Assign Profile dialog?
