Good luck. Pantone libraries in Illustrator are hard coded CMYK values to
match printed guide books CMYK values. You can select whatever ICC profile
for CMYK but that WILL NOT change the CMYK values of the PMS colors.
The soft proof on screen is determined by the working space profile.
Switching your working space ICC profile will affect the screen preview BUT
not the output. Since you can't get a ICC profile of the print conditions
under which the PMS guide books were printed your screen previews will also
be slightly off.
When proofing to your Epson the CMYK values are converted from your working
space ICC profile to the Epson profile which is why things are matching the
screen preview.
