Try first Abhay Sharma's excellent Understanding Color management.
Then, you could read the following: Colour Reproduction by Robert Hunt,
Digital Color Management by Ed Giorgianni, Color Appearance Models by Mark
Fairchild, Electronic Color Separation by R.K. Molla, Understanding Digital
Color by Phil Green, Colour Engineering by Green and MacDonald, Color
Technology for electronic imaging devices by Henry Kang, Measuring colour by
Robert Hunt, Digital Color Imaging by Gaurav Sharma, Principles of Color
Reproduction by Roy Berns, and, the pièce de résistance, Color Science by
Wyszecki & Stiles. You could also subscribe to Color Research and
Applications from Wiley.
