In this case, "source" means the image, "destination" means the output
device.
If you want the color from the printer to match what's on the screen, then
Photoshop needs to know how to convert the values in the source file. It
can't do this unless it knows what to convert them to, and it can't know
that unless you tell it how the printer is going to reproduce what you feed
it. If you fail to provide a destination profile, then it's just going to
send the Adobe RGB color values as they are, and the odds of your printer's
gamut matching Adobe RGB point-for-point are virtually nonexistent. That's
the primary purpose of color management.
You need at least two profiles to match colors between two devices. You can
either specify them in Photoshop, ColorSync or the printer, but mixing and
matching is going to cause nothing but problems (the way ColorSync currently
works makes this statement not entirely true as it tends to butt in whether
you want it to or not, but for all practical intents and purposes, that's
the way you should imagine it working).
Picking up one or both of these two books at the library or bookstore would
probably prove a wise investment if you're still confused:
