If you don't know how your images will be printed I would suggest to use a
plain Fogra27 profile such as ISOcoated.
It's the most common CMYK separation and some printers have the ability to
convert Fogra27 CMYK separations in (for example) Fogra30 separations
(ISOuncoated).
In France Alwan Color provides a great tool called CMYK Optimizer. You can
find detailed info on the web site of Alwan called www.alwancolor.com
However, the best solution is to preview your CMYK simulations with the
right output intent and the correct profiles.
